Have a Backup Plan!

Planning a wedding is not an easy thing. There are many different pieces to put together, people to organize, things to plan, and little details to remember. You spend hours upon hours, and months upon months planning every little detail that is involved to pull off even the simplest reception, so that you and your guests have a wonderful time. Even with all the planning and preparation that you do. There is one thing that is never predictable, especially in our Denver, Colorado area...Weather. Weather is very unpredictable.

So, what do you do if you are having an outdoor wedding and the weather gets bad?

If you are getting married in your backyard or outside at your venue, you will need a backup plan. Backup plans can be very easy and your reception will run very smoothly, if you have any experienced caterer, like Saucey's Catering, working with you. We recommend always discussing backup plans with your caterer, including details of what will occur, how it will occur, and at what time they need to be exceuted. Most often, this just includes the option to move inside and who will have the final say. However, Backup plans can also be made very difficult and confusing if options and details are not discussed.

Saucey's Catering catered an outside wedding the other day. Everything was outside without a tent; including the Food, DJ, Dance Floor, etc... We watch the storm rolling in; my staff and I had to make a quick decision, move or not to move. We decide to move into our planned location, The Garage. Luckily we had discussed this option at our 30 day walkthrough and we knew this was what the bride and groom wanted to do. It rained heavily for about 10 minutes and then dissipated. Without this plan the food, tables, linens, and guests would have gotten all wet and would have been cold. However, we were prepared and the reception was beautiful.

Creamy White Bean and Herb Dip

Here is a great dip recipe with Sauceys Catering, Denver Catering, Denver Caterer, Colorado catering, and Colorado caterer. We got this recipe from the Fine Cooking Magazine.

Creamy White Bean and Herb Dip

2 15-oz can cannellini beans, rinsed

4 oz cram cheese (1/2 cup)

2 Tbs fresh lemon juice

1 anchovy fillet (optional)

Kosher salt and freshly ground black pepper

2 Tbs Evo

3 Tbs thinly sliced fresh chives

1 Tbs chopped fresh marjoram or oregano

Put the beans, cream cheese, onion, lemon juice, anchovy, 1tsp salt, 1/2 tsp pepper in a food processor and process until smooth. With the motor running, drizzle in the oil. Transfer the spread to a large bowl and fold in 2 tbs of the chives and the marjoram. Also, season with salt and pepper. Transfer to serving bowl and garnish with remaining chives. Serve with crudites, bread, or crackers.

Can make 1 day ahead and refrigerate.

Lunch Boxes


Sometimes, you just don't have the room to set up a lunch buffet or the budget for a hot lunch for your staff. But, that's ok! Hawaiian Luau


We want to give a shout out to all those Employers out there who use Denver Caterers, Especially in this economy since Denver Catering is not a must have item. It is a luxury item. However, it is fascinating how the little extra things in life can give you more motivation to work harder and more efficiently when you are at work. Saucey's Catering had a corporate catering fashioned after a hawaiian luau. What a marvelous way to put a spring in your step and motivate your employees to work hard when your tired and ready for the weekend, that is not coming fast enough.

Memorial Day Wedding!




Memorial Day was a wonderful day for Saucey's Catering to cater a wedding at Evergreen Lake House in Evergreen, Colorado. A perfect setting in the foothills of the Rocky Mountains with delicious food and a wonderful reception to celebrate the union of 2 people in love!

Good Food, Good Friends, Good Times!



At Saucey's Catering as Denver Caterers, we love all of our clients and their families. We love to have each and every client enter our lives and we feel very appreciative that they want us to be a part of their special day and we strive to make that day as perfect as possible and one to remember. Every once in awhile, a couple will walk in our front door and we will instantaneously both create a friendship that goes beyond the client/caterer relationship. It is these friendships that are valued tremendously, not for catering, but for our lives and we feel enriched and bettered because of them. This wedding was one of those special occurrences and we loved to be a part of it. It was a beautiful wedding at Hudson Gardens in Littleton, Colorado under a beautiful tent. It had just rained the night before so all the plants and trees were lush and green. The menu consisted of Chicken Kiev, Garlic Mashed Potatoes, Mushroom and Spinach Salad, and Fresh Fruit Salad.
