Salsa Ranchera

Here is a great Salsa Recipe!

3 medium tomatoes, quartered

1 to 2 fresh jalapeno or serrano peppers, seeded & halved

1/2 cup chopped onion (1 medium)

1 Tablespoon Evo

1/4 teaspoon ground cumin

Makes about 1 1/4 cups

Preheat broiler. Put tomatoes and jalapenos, cut side down on a sheet pan. broil for about 9 to 11 minutes, until the tomato and pepper skins start to blacken.

Remove the skins and finely chop the tomatoes and peppers.

In a small pan cook onion and garlic in the oil. Stir in the tomatoes, peppers, and cumin. Bring to a boil. Then turn down the heat and simmer for about 10 to 15 minutes. Most of the liquid should be evaporated. Cool completely.

Serve with huevos rancheros, scrambled eggs, meat loaf, chicken, or fish

Planning a wedding is not an easy thing. There are many different pieces to put together, people to organize, things to plan, and little details to remember. You spend hours upon hours, and months upon months planning every little detail that is involved to pull off even the simplest reception, so that you and your guests have a wonderful time. Even with all the planning and preparation that you do. There is one thing that is never predictable, especially in our Denver, Colorado area...Weather. Weather is very unpredictable.

So, what do you do if you are having an outdoor wedding and the weather gets bad?

If you are getting married in your backyard or outside at your venue, you will need a backup plan. Backup plans can be very easy and your reception will run very smoothly, if you have any experienced caterer, like Saucey's Catering, working with you. We recommend always discussing backup plans with your caterer, including details of what will occur, how it will occur, and at what time they need to be exceuted. Most often, this just includes the option to move inside and who will have the final say. However, Backup plans can also be made very difficult and confusing if options and details are not discussed.

Saucey's Catering catered an outside wedding the other day. Everything was outside without a tent; including the Food, DJ, Dance Floor, etc... We watch the storm rolling in; my staff and I had to make a quick decision, move or not to move. We decide to move into our planned location, The Garage. Luckily we had discussed this option at our 30 day walkthrough and we knew this was what the bride and groom wanted to do. It rained heavily for about 10 minutes and then dissipated. Without this plan the food, tables, linens, and guests would have gotten all wet and would have been cold. However, we were prepared and the reception was beautiful.

Creamy White Bean and Herb Dip

Here is a great dip recipe with Sauceys Catering, Denver Catering, Denver Caterer, Colorado catering, and Colorado caterer. We got this recipe from the Fine Cooking Magazine.

Creamy White Bean and Herb Dip

2 15-oz can cannellini beans, rinsed

4 oz cram cheese (1/2 cup)

2 Tbs fresh lemon juice

1 anchovy fillet (optional)

Kosher salt and freshly ground black pepper

2 Tbs Evo

3 Tbs thinly sliced fresh chives

1 Tbs chopped fresh marjoram or oregano

Put the beans, cream cheese, onion, lemon juice, anchovy, 1tsp salt, 1/2 tsp pepper in a food processor and process until smooth. With the motor running, drizzle in the oil. Transfer the spread to a large bowl and fold in 2 tbs of the chives and the marjoram. Also, season with salt and pepper. Transfer to serving bowl and garnish with remaining chives. Serve with crudites, bread, or crackers.

Can make 1 day ahead and refrigerate.

However, it is fascinating how the little extra things in life can give you more motivation to work harder and more efficiently when you are at work. At Saucey's Catering as Denver Caterers, we love all of our clients and their families. We love to have each and every client enter our lives and we feel very appreciative that they want us to be a part of their special day and we strive to make that day as perfect as possible and one to remember. Every once in awhile, a couple will walk in our front door and we will instantaneously both create a friendship that goes beyond the client/caterer relationship. It is these friendships that are valued tremendously, not for catering, but for our lives and we feel enriched and bettered because of them. This wedding was one of those special occurrences and we loved to be a part of it. It was a beautiful wedding at Hudson Gardens in Littleton, Colorado under a beautiful tent. Warm weather in Denver, CO means more than just summertime or no more school for Saucey's Catering. It means playing at the park with your kids, lots of sunscreen, keeping cool at the pool, going camping, riding bikes and last, but definitely not least; wedding season. This is the time that all those Denver Caterers are gearing up for - a busy season, beautiful brides, good food, laughter, and the funky chicken. There is a lot to do, but wedding caterers thrive on the chaos. There is everything from planning the menu and the event, organizing staff, keeping in touch with the happy couple, to creating the delicious masterpieces that will be at each wedding. Well, Saucey's Catering survived another great catering weekend in Denver Colorado providing great food, fabulous service and enjoying a marvelous Easter Holiday, if I do say so myself. Thank you to the bride and groom and their wonderful families for letting us be a part of their festivities and I hope we helped them make their wedding day one that they will remember! For appetizers, we provided goat cheese and basil canapes and our warm spinach and artichoke dip for everyone to much on. The buffet consisted of our Italian Pasta Buffet, in which each guest could customize their own pasta dish. They had penne pasta in which they could top with our traditional marinara sauce or our house specialty, vodka cream sauce. They also had the option of adding tender grilled chicken or succulent italian meatballs. Add tp that a crisp ceasar salad and warm garlicky breadsticks and you have yourself a delicious, filling homestyle meal! Of course, there are many other options you can add such as our gorgonzola cream sauce or italian sausage - and that is what is great about an italian buffet - you can customize the whole buffet with your tastes in mind!

Peanut Butter Cookies

So, I was sitting here in Denver, Colorado and thinking about an upcoming corporate catering event in which we are making cookies and brownies. Which that got me thinking about one of my last posts - the one on peanut butter cookies with a chocolate kiss. Saucey's Catering by no means wants to withhold anything from our friends. I decided that I wanted everyone to be able to enjoy one of my favorite cookies, so here is the recipe!

Peanut Butter Chocolate Kiss Cookies

1/2 cup butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 teas. vanilla
1/2 teas. baking soda
1 cup flour
1/2 cup peanut butter
chocolate kisses

1. Cream the butter and sugars together.
2. Add the egg and vanilla - blend until smooth.
3. Add the flour and baking soda - blend until smooth.
4. Add the peanut butter - blend until smooth.
5. Place on cookie sheet and bake for 6 minutes at 375 degrees
6. Add chocolate kisses onto center of each cookie and cook 2 more minutes.
They will be done when you can see a golden brown on the edges of the cookies. You do not want them to over bake - otherwise when they cool they will be crunchy.
7. Take out and let cool for 10 minutes
8. Eat and enjoy with a tall glass of cold milk! Save some for later!

Going Green

Denver Catering is a tough business with a lot of qualified competition. In order to be included with the top Colorado corporate, social and wedding caterers, it's often times the little things that make a difference. Just as in many other businesses and services, the attention to detail in Colorado catering is just as important as the food and the service. In the Denver Metro and surrounding areas, going green has become a very important part of life. The interest has grown tremendously and people understand the importance of giving back to the land. We, at Saucey's Catering feel that we have been tremendously blessed and feel the need to return the favor. For this reason, we have implemented many new policies.

The last bout of warm weather here in Denver, we started working on our garden. In this garden, we have planted many vegetables and herbs that we use in our menus. This way, we have the freshest ingredients without the chemicals and the plastic packaging from the store. We also compost. All food service prep produces a certain amount of pproduce waste, such as egg shells, onion peels, and melon rinds. We take these items, compost them, and use them to fertilize our garden. Thus reducing waste, enriching the soil, and enhancing our produce that ends up on your table. For our events that we cater, we also encourage the use of china to reduce the usage of waste. For those who are interested in using disposables, we have entered green disposable products, such as cornstarch plates into our inventory. There are so many options of available items these days. Denver Blizzard!

Weather is a fickle thing, here is Denver Colorado. One day you can have 70 degree weather while the next you get a blizzard, giving you a foot of snow by noon. It can be a little tricky to plan events and catering jobs with this sort of uncertainty, but it definitely gives us the chance to troubleshoot and rise to the occasion! Snow doesn't stop us in Denver! While things keep moving forward, we would love to sit back, watch the snow falling, and drink a nice steaming mug of hot chocolate with some little marshmallows slowly melting and floating at the rim of your mug. So, in these uncertain months, give us a call! You can count on Sauceys Catering for all your wedding, corporate, and social events - rain, snow, or shine!

Peanut Butter Cookies

Here at Saucey's Catering, I believe that if there were ever a marriage of flavors that will forever be standing - it would be that of peanut butter and chocolate. They meld together effortlessly. Now of course, you have to have the right ratio of chocolate to peanut butter and everyone's ratio is different. My personal favorite is to have more chocolate or at least 50/50. There are so many delicious ways to prepare chocolate and peanut butter. My personal favorite is peanut butter cookies with a hershey kiss on top. If you make them just right, when they come out of the oven, the peanut butter cookie is still moist and soft. The chocolate kiss still holds its shape, but is warm and soft. The two together create a perfect bite! This cookie is also a perfect cookie a couple of days later. All you have to do is pop it in the microwave for a few seconds to warm up the chocolate kiss and you have a delicious dessert or snack. Imagine sitting on your front porch in Denver looking up at the distant snow capped mountains eating a peanut butter cookie with a partially melted chocolate kiss and washing it down with a ice cold glass of milk. I don't think it could get too much better than that! What a wonderful treat for your guests at any corporate or social catering - a change from the typical chocolate chip cookie (still good, just different!).

Gerbera Daisies

Although Sauceys Catering is not in the "flower business", we still love flowers and love using them in our denver catering, corporate catering, and especially weddings. Flowers are used in weddings as a way to wish well wishes and thanks to all guests in attendance. Right now Gerbera jamesonii (or Gerbera Daisies) are the 5th most popular flower (not just for weddings). They fall behind roses, tulips, carnations, and chrysanthemums. Gerbera daisies have large flowering heads that closely resemble sunflowers. They are so popular because they are so bright and colorful. They come in a variety of vibrant colors including red, orange, yellow, bright pink and white. Gerbera daisies represent innocense, purity, and cheerfulness. Flowers are a great way to decorate your buffet and add a punch of color that leave your guests feeling happy.

Corned Beef and Cabbage

Saucey's Catering believes that food is such an important part of our daily lives - first and foremost for survival (that goes without saying), but it also has so much to do with tradition, social gatherings, and it is a big part of our community and culture. Growing up, as my family and I traveled, my father would always order something off the menu that we had never tried before or that was traditional to the area we were in. He wanted us to appreciate the food and culture of other communities.

As we just finished celebrating St. Patricks Day I was intrigued on learning more about Irelands traditional foods, such as Corned beef and cabbage. Corned Beef refers to a piece of meat (usually brisket) that is put in a large crock and cured by covering in large rock salt pieces that look like corn - hence "corned" beef. Apparently during the time of the potato famine, you would not find this meal in Ireland all that often. Beef was expensive and most farmers and others would find pigs/bacon to be more affordable. Corned beef and cabbage became popular when immigrants traveled to the United States to escape the potato famine. They joined the thousands of eastern europeans in New York who introduced them to the delicious, cheap and plentiful corned beef and cabbage and potatoes. Thus, the Irish Americans adopted this dish and use it to celebrate on St. Patricks Day !

Saucey's Catering wants to wish all those Irishmen and Irishmen at heart a Happy Saint Patrick's Day! It was a big day for Denver Catering, social, and corporate catering due to the need and desire to celebrate this fabulous green day. High on the selected menu was the famous Green Eggs and Ham.

"Say! I like green eggs and ham! I do - I like them, Sam I am! And I would eat them in a boat. And I would eat them with a goat! And I will eat them in the rain. And in the dark. And on a train. And in a car. And in a tree. They are so good, so good you see!"

Parmesan Makes Everything Better!

People love bacon. Everywhere you look, from breakfast diners to the Food Network, you hear of people saying that bacon makes everything better. Well, here at Saucey's Catering, we believe that Parmesan Cheese makes everything better!

Parmesan cheese is a hard, dry cheese made for skimmed cows mild. It is aged anywhere from 14 months (in the U.S.) to 4 years (specific types of Italian Parmigiano-Reggiano) and has a sweet, buttery, and salty flavor profile, which tends to get stronger as its aged longer.

In cooking, salt is used to actually bring out and enhance the foods natural flavors, which makes food taste better. Because Parmesan Cheese has a salty and distinct flavor to it, it can be added to almost anything to enhance flavor and add depth to the dish.

At Saucey's Catering, fully catered events are events in which we provide staffing to help run your corporate cateres and social catered event smoothly. There is already so much for a host to do when planning a party, that this is a great option to help ease the stress . Our wonderful denver catering staff are the ones that we owe everything to. Way too often, they are behind the scenes and do not receive the proper credit that they deserve. They work extremely hard with little acknowledgment. They are the ones that keep us going and make Saucey's Catering the professional and reliable catering company that we are. For each event, our staff comes in before the guests arrive to unload all the equipment, set up tables, decorations, any buffets, and whatever else we can do to help. Throughout the event, they manage all the behind the scenes activities; such as manning the buffet, cleaning dishes, troubleshooting in case the need arrives, keeping the timeline on track, cutting cake, serving dessert, serving drinks, and bussing the tables. Each member of the waitstaff has his or her own responsibilities, while the captain oversees the whole operation. As the event comes to a close, the waitstaff begins to clean up. This includes rounding up all leftover favors, trash, clearing tables, the tear down and packing all decorations, breaking down and stacking the tables and chairs, sweeping and mopping floors, and cleaning kitchens. All in all it is a hard days work with not much rest, but is worth it to help our clients have an enjoyable event. I know we don't say it enough, but to all our staff- we know you work really hard and we appreciate it! We couldn't be here today without you, so thank you very much!

What a beautiful day today! Sunny skies, no wind, 70+ degree weather, and a gorgeous view of the Rocky Mountains here in Denver CO. It definitely was not a typical day in a Colorado winter. Or maybe it was, since weather here changes so drastically. You would never imagine that after a day like today, they would be calling for snow next week. But that is life here - you have to enjoy it while it lasts! Saucey's Catering loves this type of weather! It is the epitome of what people think of when they think of gatherings and parties. In fact, I got a chance to spend some time soaking up some vitamin D and my thoughts wondered to the thrills of summer. There is nothing as great as sitting under the shade of a big oak tree with an ice cold lemonade in hand, smelling some big, juicy burgers sizzling on the grill and watching all the kids running around playing tag or throwing a frisbee. The laughter is all around you and people are happy. It is a time of relaxation and enjoyment. I think sometimes people get too wrapped up in thier fast pace lives and forget to enjoy the little things. I know that I do and every once in awhile, I have to remind myself that life is too short and it goes by too fast to worry about the small things. Thats why we are here. We are here to help you enjoy life a little more. Wedding Cakes

The reception of a wedding is one of the most thought about and planned event in a girls life. Some girls spend their whole lives looking through magazines and now on the internet planning their perfect day. I never was one of those girls - not to say I didn't want to be, I just wasn't. I never looked at wedding dress pictures or thought about a ring. However, I have since made up for that, now that I am in the wedding business. I pour through books, and magazines, and websites trying to get new ideas for displays and presentations, and every once in awhile I will get a twinge of "oh that would be really fun to have". The one thing that really peaks my interest is the wedding cake. Wedding cakes are one of the most recognizable and intriguing parts of a wedding reception. These days, the wedding cake is not only a piece of dessert, it is a work of art and people are getting so creative with them! There are so many new and exciting flavors out there and I love how people can design their cakes to match their wedding theme and decorations - even down to the exact color and prints!

It is interesting to see how far wedding cakes have come. It is believed that the wedding cake began as loaves of wheat bread, which was broken over the brides head. The crumbs that fell on the ground were symbolic of good luck and fertility. In the middle ages, each guest brought a simple biscuit or scone, which were piled up and the bride and groom had to reach over the pile and kiss to bring them good luck. In the seventeenth century, french bakers began to stack buns on top of each other and coat them with icing. This is believed to be how our wedding cakes started to look like they do. Fascinating! Well, we are making the jump to the blogging world. Neither CJ or I have blogged before, so this is a brand new experience for us - so, please bare with us while we figure this whole thing out! Let me introduce us! My name is Vanessa Stakes. My husband (CJ) and I own and operate Saucey's Catering in Denver CO. Saucey's Catering is a full service catering company here to make your event hassle free. We cater everything from corporate luncheons to weddings, picnics, reunions, showers, holiday parties and any other event you might come up with. We provide an assortment of different options including buffets, plated meals, appetizers and hors d'oeurves. We have some fun new options which include action stations and our upcoming floating buffet! All of our staffed events include professional staff to set up, tend to your guests, bar tend (if needed), and clean up. Its a great service so that you don't have to worry about a thing. Anyway, CJ is our Chef, and, if I do say so myself, he is amazing in the kitchen! He has worked in the culinary industry all over Denver, including places such as The Medical Center of Aurora, The Denver Convention Center, and Invesco Field. He has prepared food for everything from individual meals to parties of 50,000, including when the Democratic National Convention was in town. Its quite the organized chaos. Anyway, we both are in the office, so if you give us a call, one of us will answer! In addition to Saucey's Catering. We have three small boys; Aiden and Tristen are 2 year old twins and Kelan (pronounced Key-lan) is 8 months old. They are so much fun and keep us busy. There really is never a dull moment.
